What You’ll Need
3 eggs
300 g whole cane sugar
120 g chocolate
60 g unsalted butter
160 g flour
5 g baking powder
1.5 g baking soda
2.5 g salt
100 g white sugar (for rolling)
200 g icing sugar (for final coating)

In a bowl, beat eggs and whole cane sugar for 5–7 minutes, until the mixture becomes fluffy and lighter in colour.

Portion into 30-33 g balls Portion into 30–33 g balls, then chill again for 20 minutes.
Roll in sugar, then icing sugar Roll each ball first in white sugar, then generously in icing sugar for that signature crinkle look.
Bake for 14-16 minutes. Preheat oven to 320ºF (160ºC).
Place dough balls on a parchment-lined or silicone baking sheet.
Bake for 14–16 minutes until cracks appear and edges are set.
